Freshly beaming with pride from making my own brown rice flour!! It's the simple things! So anyway, I wanted to use it on a nice citrus recipe . This healthy refreshing loaf is great for morning / afternoon tea and gluten free .
The DIY grounded brown rice is not as fine and powdery as the one you can buy from the store but it still does a great job for baking .
The loaf is very refreshing and zesty. The edge turned out a bit grainy/crunchy (similar to low course polenta texture) however inside the loaf is a nice smooth texture .
The citrus flavor seemed to developed more intensity stored overnight in the refrigerator.
I love mine when it smear with creamy butter and served with a nice cup of tea. Divine ~ Enjoy!
Ingredients:
250grams brown rice flour ( DIY grounded brown rice flour click here )
210grams caster sugar
250gram butter at room temperature
2 tsp baking powder
4 eggs beaten
1x lemon juice and grated zest
Lemon sauce:
1 x lemon juice and grated zest
3 tbs caster sugar
Material :
Food Processor
1 x loaf pan
1 x chopstick
Baking paper
Get all ingredients ready for the loaf!! |
Line your loaf pan with baking paper (to make the baking paper stick to the pan, grease with butter ) |
(Clockwise from top left) (1) Four eggs, (2) beat the eggs (3) lemon juce and (4) lemon zest. |
Add all your ingredients into the food processor and blend for 10 seconds until smooth |
Add blended mixture into the lined loaf pan. Shake the pan to smooth out the mixture |
Pop into a
preheated oven at 3500 F (1800 C) for about 40-45mins

While baking, you can prepared your lemon sauce. In a bowl add lemon juice, sugar and mix well until the sugar is dissolved. Keep grated lemon zest in a bowl for garnish. |
Voila ~ Refreshing Lemony loaf is served ! I love mine smeared with butter Yummo ! |
