What's for dinner ?!! It's a typical week night, you open your fridge and find there's various leftovers here and there. I had some roasted chicken, eggs and few bits of fresh vegetable left in the cooler section . A quick tasty fried rice would be the perfect way to use up all your leftovers! I call this
"Stir Crazy" fried - rice basically you have to stir fry all your ingredients! Enjoy
Ingredients
1 1/2 x cups of cooked rice ( how to cook your own rice click here )
1/2 roasted chicken shredded ( removed bones)
1 x red capscium (chopped)
1 x leek (chopped)3 x eggs beaten (freerange)
Oil for cooking
1/2 tsp salt
spig of coriander or chopped shallot for garnish (optional)Sauce for the fried rice :
2 tbs dark soya sauce ( it's not as salty as normal soya sauce and gives food a nice dark glossy colour)
1 tbs oyster sauce
1/2 tsp sugar
1/4 tsp sesame oil
Prepared all your ingredients |
To make your sauce, add these (above) into a small bowl and mix well |
Heat up a wok on medium to high heat. Add 1 tbs oil and stir fry each ingredient separately: leek, capscium and eggs and store back into individual bowls |
Make a well (hole) in your stir fry mixture and add your sauce mixture into the wok. Sprinkle salt and stir fry for a min |
Voila ~ Stir crazy fried rice served!! Enjoy :) |
