My Dear Readers, I’ve been on a cooking frenzy. I would love
to show you my new beautiful dainty bundt pan from Nordic Ware Made in the USA J and it was on sale half price at Victoria
Basement!!! I just cannot resist a bargain. I used it in baking these delicious scrumptious Lemon Petite Fours. OMG!! Once you finish baking these,
you just can’t stop eating them. You can see they didn’t have a chance to make
it to the icing prep hehe ~ Oh well they are just so irresistible J Enjoy xoxo
Ingredients:
150gram Rice Flour
1/3 cup caster sugar
150gram melted butter (also need extra for buttering the bundt tray)
1 x lemon zest
3 x eggs (freerange)
Gather all your ingredients |

Chop and melt butter in microwave for about 10secs |
1 x lemon zest |
Add eggs and sugar in a bowl |
Whisk till it's creamy and pale |
Sift your flour |
Add 1/3 portion of the flour at a time to the egg mixture and fold, repeat twice until all the flour has been combined well |
Add your lemon zest and melted butter into the mixture and combine well |
Use clingwrap to cover your mixture and leave it for about 30mins. It should be creamy and oozing |
Butter your bundt tray with melted butter and spoon mixture
into tray. Pop into a preheated oven at 250 F. Bake for 7-8mins

Turn the pan upside down and Voila ~ Enjoy! |
